This fancy lobster mac and cheese is made with a three-cheese sauce, chunks of lobster meat, tossed together in pasta and baked to golden, crisp-top perfection. This decadent and comforting seafood pasta can be served as a side dish or a main one, you can’t go wrong either way!
Preheat oven to 375 degrees F. Cook pasta according to package directions. Drain and rinse under cold water to stop cooking. Set aside.
Melt 4 tbsp butter in a large skillet over medium heat. Add flour to the skillet and whisk for 2 minutes. Slowly add milk in 1/4 cup increments while whisking at the same time. Add salt, pepper, and paprika and stir until combined.
Add cheddar, gruyere, and Parmesan to the skillet and stir until completely melted. Add lobster meat and pasta to the skillet and stir until well combined. Transfer to large baking dish or oven proof skillet.
Combine bread crumbs and 2 tbsp of melted butter in a small bowl. Spread across the top of the lobster mac and cheese. Place into oven and bake for 18-22 minutes, until the top golden. Let cool 5 minutes before serving. Garnish with parsley.
