Preheat oven to 375 degrees F. Line a baking sheet with parchment paper, set aside.
Season both sides of halved chicken breasts with salt and pepper.
In the first shallow dish, place flour.
In the second shallow dish, whisk together eggs, garlic powder, and onion powder.
In the third shallow dish, combine panko, parmesan, and Italian seasoning.
Dip chicken into flour. Shake to remove any excess. Dip into the egg mixture. Then press into the panko and parmesan mixture. Repeat with remaining chicken and set aside on a plate.
Heat avocado oil in a skillet over medium heat. Add half the chicken to the skillet. Brown chicken on each side, 1-2 minutes. Transfer to prepared baking sheet. Repeat with remaining chicken. Make sure chicken is spread apart when arranged on baking sheet.
Spoon a large scoop (about 2-3 tbsp) of marinara sauce over the top of each chicken piece. Sprinkle with mozzarella cheese and place into oven. Bake for 18-22 minutes or until chicken is cooked through. Serve immediately over pasta or with salad.
