These tender and juicy sirloin steak kabobs are first marinated in a sweet and tangy apple cider marinade. The steak is then threaded along with seasonal tart apples and red onion. When finished baking, they are brushed with the reserved apple cider marinade for an extra punch of flavor.
In a medium bowl, whisk together apple cider, apple cider vinegar, soy sauce, honey, garlic, paprika, salt and pepper. Add beef to the marinade. Place into the refrigerator to marinate for 1 hour.
Preheat oven to 425 degrees F. Line a baking sheet with parchment paper. Set aside.
Remove beef from the marinade and set marinade aside. Thread the beef, onion, and apple onto skewers, leaving just a few millimeters between each addition. Place onto prepared baking sheet.
Place into the oven and bake for 10-12 minutes, turning once halfway through baking time.
Heat reserved apple cider marinade in a medium saucepan over medium heat for 10 minutes. Remove from heat.
Brush steak kabobs with sauce. Garnish with fresh thyme(or preferred herbs) and serve.
If using wooden skewers, soak for at least 30 minutes in water before baking to prevent them from burning up.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
