Bruschetta Chicken Bake

Bruschetta Chicken Bake With Cherry Tomatoes, Basil, Provolone, And Balsamic Glaze

This one hit home this week and will probably be on repeat for the next month or two until my husband says no more. This chicken bake has all of the summer flavors associated with fresh ripen tomatoes and basil and the balsamic glaze is the pretty bow tie that ties all of it together into one dish.

Let’s Make This Dish!

Chicken breast is my go-to for this dish. Feel free to use chicken thighs, I’m sure they’re going to be awesome for this dish too! We are not marinating them here, just seasoning with salt, pepper, and little olive oil. Next up, brown them in a pan, this will make them crispy on the outside. Arrange them in a baking dish. The baking dish I chose for these photos is just a tad bit small and only fit only 3 chicken breasts, but 4 will work best with a regular baking dish, I promise!

Before baking the chicken, top it with a few slices of provolone cheese. Then top is with a bruschetta combination of tiny cherry tomatoes and fresh basil with a light drizzle of balsamic glaze. Most bruschetta recipes call for roma tomatoes, I thought these tiny colorful ones will deliver the same flavors but also add more color and depth.

Bake it for 30-35 minutes or until completely cooked through. Cooking time will also depend on the size of your chicken breast. When the chicken is done, add a few more scoops of fresh bruschetta and one final drizzle of balsamic glaze. Serve this dish with a side of lemon pepper asparagus, garlic parmesan dinner rolls, roasted sheet pan veggies, or rosemary-parmesan butternut squash.

Ingredients

Bruschetta Topping

  • 1 (12 oz) package cherry tomatoes, cut in half
  • 1/2 cup fresh basil, sliced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Chicken

  • 4 chicken breasts
  • 2 tbsp olive oil, divided
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 8 slices provolone cheese
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat oven to 375 degrees F.

  2. Combine the bruschetta topping ingredients in a medium bowl. Set aside.

  3. Brush chicken breasts with 1 tbsp olive oil and season with salt and pepper. Heat 1 tbsp olive oil in a large skillet over medium/high heat. Transfer chicken to skillet. Brown each side of chicken for 2-3 minutes until both sides are golden and crisp. Transfer to baking dish.

  4. Top each chicken breast with 2 slices of provolone cheese. Top with half of the bruschetta topping. Drizzle 1 tbsp of balsamic glaze. Place into oven and bake for 30-35 minutes or until completely cooked through. Cooking time will depend on the size of the chicken breast.

  5. Remove from oven, top with remaining bruschetta topping and a final drizzle of balsamic glaze.
