Chicken Quinoa Wraps

If you’re looking for an on-the-go meal, this is it. These wraps include only seven ingredients and are packed with protein and fresh vegetables. The balsamic vinaigrette gives it that much needed tangy burst of flavor. Think of it as a healthy, delicious salad wrapped in a tortilla blanket. Happy munching!

Chicken Quinoa Wraps
Ingredients
- 1 1/2 cups cooked quinoa
- 1 medium cooked diced chicken breast
- 1 cup chopped leafy greens
- 1 red bell pepper seeded and thinly sliced
- 1 avocado diced
- 3 tbsp balsamic vinaigrette
- 2 large tortilla wraps about 12” in diameter
Instructions
- In a medium bowl, toss together quinoa, chicken breast, leafy greens, bell pepper, avocado, and balsamic vinaigrette.
- Divide chicken and quinoa mixture between two of the tortilla wraps.
- Roll up into a burrito and serve.
