Ingredient Notes

  • Chicken Breasts: While chicken thighs offer more flavor and moisture, breasts can be used for a leaner option. Just be cautious not to overcook them!
  • Fresh Mushrooms: Cremini or button mushrooms work best. Their earthy flavor complements the Marsala beautifully.
  • Sweet Marsala: This is essential for the sauce. If you don’t have it, you can substitute with a dry white wine, but the flavor will differ slightly.
  • Heavy Cream: For that luscious, creamy texture. You can use half-and-half for a lighter version, but the sauce may be less rich.
  • Garlic, Shallots, and Herbs: Fresh garlic and shallots add depth to any sauce. Dried thyme and rosemary enhance the overall flavor profile.
  • Chicken Broth: Use low-sodium to control the saltiness of the dish.

1. Can I use frozen chicken? Yes! You can use frozen chicken, but the cooking time may need to be adjusted. Ensure it cooks through to an internal temperature of 165°F (75°C).

2. How can I thicken the sauce? If you prefer a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir it in during the last 30 minutes of cooking.

Ingredients

For the Chicken

  • 3-4 boneless, skinless chicken breasts (weighing about 2 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh cracked black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 ½ cups of sliced mushrooms, button or cremini
  • 2 shallots, diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • ½ cup marsala wine
  • ½ cup heavy cream
  • ¼ cup grated parmesan
  • chopped parsley, for garnish

For the Green Beans

  • 1 pound green beans, ends trimmed
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • ¼ teaspoon fresh cracked black pepper
  • ½ teaspoon onion powder
  • 6 cloves garlic, minced
  • ½ cup grated parmesan

Instructions

For the Chicken (Pot 1)

  1. Drizzle the chicken with olive oil and season with salt, pepper, thyme, and rosemary on both sides.

  2. Preheat the first pot of the Crock-Pot® Multicooker on the 'Sear/Saute' HIGH setting. Once preheated, brown the chicken breasts on both sides, two chicken breasts at a time.

  3. Place the browned chicken breasts into the bottom of pot 1(the left pot). Add the mushrooms, shallots, garlic, chicken broth, and marsala to the same pot. Cover and select the 'Slow Cook', 'HIGH' 4 hours, and 'SYNC FINISH' settings for the first pot. Then, press 'START'.

For the Green Beans (Pots 2)

  1. Toss together the green beans ingredients.

  2. Preheat the second pot of the Crock-Pot® Multicooker on the 'BAKE', 'HIGH' setting for 20 minutes and press 'START'. Once preheated, place the green beans into the bottom of pot 2(the right pot). Cover and let cook.

  3. Since the first pot is Synced, they will finish at the same time and the green beans will remain warm until the chicken is finished cooking.

  4. Once the chicken is finished, stir in cream and parmesan. Serve immediately with the green beans and garnish with parsley.
