Greek Chicken Gyros With Tzatziki
Greek chicken gyros have herb and spice marinated chicken that is layered with fresh sliced tomatoes and red onions and tucked into a pita with a dollop of homemade tzatziki sauce. (Jump to Recipe)
To this day I still have, I still have very vivid imagery of our visit to the island of Santorini last summer. And food, to that matter, is a big part of it. I didn’t anticipate to enjoy Greek food more than some of the other cultural food I’ve tried. Out of a number of countries I’ve been to, Greek food comes in second place on my taste bud list. There’s something about their spices and herbs that are unbelievably pungent!
The chicken in these chicken gyros is first marinated in an herby/spiced olive oil mixture then cooked on a skillet. If you have the za’atar spice on hand, you can use 1 tablespoon of that with 1/4 cup of olive oil instead of the one I provide below on the recipe card. I know sometimes it’s hard to come across that spice at the grocery store so I made a more basic one instead.
Inside the pita bread (aside from the chicken), I layer it with sliced tomatoes and red onions. Another option would be to add sliced cucumber, shredded lettuce, crumbled feta cheese, and/or french fries (a little strange.. but we did try it this way in Greece).
The tzatziki sauce here is so easy to make. Throw everything in a food processor and process it for a minute. At the end, stir in the olive oil and that’s it.
Layer on your pita and please pace yourself when eating.

Greek Chicken Gyros With Tzatziki
Ingredients
- 2 pounds chicken tenderloins
- 2 tbsp olive oil
- 6 pita breads
- 3 roma tomatoes, cut into wedges
- 1 red onion, thinly sliced
For The Marinate
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1/4 tsp dried thyme
- 1/4 tsp cumin
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
- 1/4 tsp toasted sesame seeds
For The Tzatziki
- 1 cup plain Greek yogurt
- 1/3 cup diced English cucumber, unpeeled
- 2 cloves garlic
- 1/4 tbsp fresh chopped dill
- 1/4 tsp salt
- 2 tsp white wine vinegar
Instructions
- Combine olive oil, oregano, thyme, cumin, red pepper flakes, salt, and sesame seeds in a medium bowl. Stir to combine. Add chicken and toss to coat. Cover bowl with plastic wrap or foil and place into refrigerator for 30 minutes to marinate. Meanwhile, make the tzatziki sauce.
- Place tzatziki ingredients into a food processor and processes for 1 minute. Refrigerate until ready to use.
- Heat 2 tbsp olive oil in a skillet over medium heat. Carefully place chicken into the hot pan, making sure you don't overcrowd the pan. Depending on the size of your pan, you may need to do this in 2 separate batches. Add additional oil as needed in between batches. Cook chicken until cooked through, 4 to 5 minutes per side.
- Assemble the gyros starting with the pita bread, cooked chicken, 3-4 slices of tomatoes, a few strings of onions, and last, tzatziki. Repeat with remaining ingredients and serve.
