I am back in the swing of things with cooking and recipe creation in my kitchen after a month from bringing our firstborn home. He was born July 7th, 2021 and absolutely perfect, thank heaven. I’ve taken a month off to spend time with and nurture this new human. It’s all so surreal he’s ours.
We are slowly learning (mainly improvising) on how to do daily life again with all these new changes. I can say blogging will look a little different for me the next few weeks but I can’t describe the feeling of wanting to be in the kitchen again playing with food.
For today, I’m keeping things simple with this caprese salad. I’ve shared some photos from this last month all the way on the bottom of this post, hope you enjoy them and this delicious salad!
This simple dish has a few ingredients but will get you wondering how something this simple can taste so amazing. I’d say the seasonal ready tomatoes have a part in this.
Heirloom tomatoes are the pick of the vine here. Tomatoes, in general, are sweetest and juiciest in the summertime. This is one of the reasons why this salad is best made in the summer. Don’t stick to one color. Try to pick two to three different colors when picking tomatoes. This will dress the salad in an effortless way.
Creamy and soft mozzarella cheese is sliced and plated with the juicy tomatoes.
Choose different sizes of fresh basil leaves(small and large) to garnish this salad.
Good quality extra virgin olive oil is a must Unfiltered olive oil is my game! It’s has a more peppery flavor.
Balsamic vinegar is completely optional here. Although, the classic version of this caprese salad recipe skips the balsamic vinegar. I prefer a small splash of acidic balsamic vinegar for balancing out the other flavors of this dish.
Just a sprinkle of sea salt.
Layer your platter with slices of tomatoes and mozzarella cheese. Sprinkle with basil leaves. Drizzle with olive oil and balsamic vinegar. Add a sprinkle of sea salt.
