Shrimp Opt for large or jumbo shrimp for foil packets. I love using shrimp with the peel on for an added layer of “seafood” flavor. If you prefer to use peeled shrimp, grilling time will need to be decreased anywhere from 2-4 minutes to prevent over cooked rubbery shrimp.

Honey This adds a wonderful sweetness that balances out the heat from the chipotle. If you prefer, you can substitute with maple syrup or agave nectar.

Dried Chipotle Pepper Seasoning This seasoning brings a smoky, spicy kick to the dish. You can adjust the amount based on your heat preference. For a milder dish, use less chipotle, or remove the seeds. If you prefer to leave out the heat out, substitute the seasoning with a mild, non-spicy paprika.

  1. Can I prepare these foil packets in advance? Almost any foil packet meal can be prepared in advance as long as lime juice is removed. When shrimp sit in lime juice, the citric acid breaks down the shrimp’s proteins, which gives the shrimp a firmer texture and opaque appearance, and this ultimately cooks the meat. As long as the lime juice is added over the shrimp and veggies right before cooking, preparing the other ingredients should be just fine.
  2. Can I cook these in the oven instead of on the grill? Absolutely. Preheat your oven to 400F and bake the foil packets on a baking sheet for about 15-20 minutes, or until the shrimp are cooked through and the vegetables are tender.
  3. What if I don’t have chipotle pepper? You can substitute the chipotle powder with a mix of smoked paprika and cayenne pepper for a similar smoky heat. Adjust the quantity to taste.
  4. Are there any other proteins I can use instead of shrimp? This recipe works well with diced chicken, fish, or even tofu. Just adjust the cooking time accordingly, ensuring that the protein is cooked through.
  5. How do I store leftovers? Remove any leftovers from the foil packets and into an airtight container. Store in the refrigerator for up to 3 days. Best reheated in the microwave or oven.

These shrimp foil packets are naturally gluten-free and dairy-free. I always recommend checking all of the labels of ingredients to ensure there is no hidden gluten or dairy.

If you feel that a foil packet is not completely secured, I suggest wrapping that foil packet with an additional layer of foil to prevent leaks and possibly breaking open.

Ingredients

For the Shrimp:

  • pounds large shrimp, shell on
  • 1 red pepper sliced
  • ½ yellow onion sliced
  • 3 ears of corn cut into 2-inch pieces
  • 1 jar Pearls Specialties Jalapeño Stuffed Olives
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 teaspoons lime juice
  • 2 cloves garlic minced
  • 1 teaspoon chipotle pepper
  • 1 teaspoon kosher salt
  • 1 lime cut into wedges, for serving
  • 4 18-inch pieces of aluminum foil, for assembling

For the Avocado Salsa:

  • 2 avocados cubed
  • 1 cup cherry tomatoes cut in half
  • ¼ cup diced red onion
  • 1 tablespoon lime juice
  • 1 tablespoon chopped cilantro
  • ¼ teaspoon kosher salt

Instructions

  1. Preheat the grill to medium heat (375-400F).
  2. Add the shrimp, peppers, onion, corn, and olives to large bowl.
  3. In another bowl, whisk together the olive oil, honey, lime juice, garlic, chipotle pepper, and salt. Pour over the shrimp/vegetables. Toss until everything is coated well. Season with additional salt if desired.
  4. To assemble the foil packets, lay out the four pieces of foil on a clean surface. Distribute the shrimp/vegetables evenly into the four pieces of foil. Fold each side of the foil over like an envelope to enclose.
  5. Place the packets onto the preheated grill, ensuring they are not overlapping. Grill for 15-18 minutes, flipping the packet halfway through. Cook until veggies are soft and shrimp is fully cooked.

  6. While the foil packets are grilling, place all of the salsa ingredients in a large bowl and stir until well combined.
  7. Transfer the foil packets to a large baking sheet or individual plates. Carefully open the foil packets and tuck the foil over to form a border to hold all of the ingredients.

  8. Spoon the salsa over the shrimp and serve with lime wedges.
