Within this last year, I’ve experimented with all kinds of different vegetables and surprisingly, my affection towards them has changed. I was inspired to explore every corner of the produce aisle after reading Superfoods: 50 best foods to change your life. This book was not only eye opening(for obvious reasons) but heightened my awareness of the nutrient dense food that I previously overlooked and was missing out on. So here’s to catching up on my vitamins and a tasty side dish to my Chipotle BBQ Baby Back Ribs!

Rosemary-Parmesan Butternut Squash
Honey Glazed Carrots
Ingredients
- 3 tbsp olive oil
- 3 tbsp honey
- 1 1/2 tbsp apple cider vinegar
- 3 garlic cloves minced
- 1 tsp garlic salt
- 1/4 tsp ground black pepper
- 20 baby carrots or small carrots
Instructions
- Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or foil.
- In a small bowl, wisk together olive oil, honey, apple cider vinegar, garlic, garlic salt, and pepper.
- Arrange carrots on baking sheet in a single layer. Pour the honey and garlic mixture evenly over the arranged carrots.
- Bake for 35 mins or until tender. Serve immediately.
