Honey Glazed Carrots

Within this last year, I’ve experimented with all kinds of different vegetables and surprisingly, my affection towards them has changed. I was inspired to explore every corner of the produce aisle after reading Superfoods: 50 best foods to change your life. This book was not only eye opening(for obvious reasons) but heightened my awareness of the nutrient dense food that I previously overlooked and was missing out on. So here’s to catching up on my vitamins and a tasty side dish to my Chipotle BBQ Baby Back Ribs!

Honey Glazed Carrots

Course Side Dish
Prep Time 5 minutes
Cook Time 35 minutes
Total Time 40 minutes
Servings 4

Ingredients

  • 3 tbsp olive oil
  • 3 tbsp honey
  • 1 1/2 tbsp apple cider vinegar
  • 3 garlic cloves minced
  • 1 tsp garlic salt
  • 1/4 tsp ground black pepper
  • 20 baby carrots or small carrots

Instructions

  1. Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or foil.
  2. In a small bowl, wisk together olive oil, honey, apple cider vinegar, garlic, garlic salt, and pepper.
  3. Arrange carrots on baking sheet in a single layer. Pour the honey and garlic mixture evenly over the arranged carrots.
  4. Bake for 35 mins or until tender. Serve immediately.
