Mexican Watermelon Salad
This refreshing summertime salad is made with cubed watermelon and a few Mexican inspired toppings such as Tajin chili lime seasoning, cotija cheese, lime juice and zest. (Jump to Recipe)
You’d be surprised how a few ingredients can bring such a burst of flavors. You can have watermelon OR you can have chilled, zesty chili lime, Mexican watermelon salad. This is the center of my happy place at this moment.

You’ll need:
- a small-ish watermelon, chilled in the refrigerator
- Tajin (chili pepper, lime, salt seasoning) – I always find it next to the limes in the produce section
- cotija – a crumbly Mexican cheese that has a strong, salty flavor made from cow’s milk
- 1 lime
To make it: Dice the watermelon into 1 inch cubes. Sprinkle with Tajin, lime zest, and crumbled cotija. Squeeze the juice out of the lime right on top of the watermelon salad and serve!

Mexican Watermelon Salad
Ingredients
- 1 small seedless watermelon
- 1 1/2 tsp Tajin seasoning (chili pepper, lime, salt seasoning)
- 1 lime, zested and juiced
- 1/4 cup cotija cheese, crumbled
Instructions
- Cube watermelon into 1 inch cubes, transfer to a large serving plate.
- Sprinkle watermelon cubes with Tajin, lime zest, and crumbled cotija. Squeeze the juice out of the lime right on top of the watermelon salad and serve!
