One Pot Greek Couscous Chicken With Lemon Dill Yogurt Sauce

This one pot meal is perfect those busy weeknights when you need to whip up something quick but also want to cut back on washing multiple pots or pans. This meal is for you!

To Make This One Pot Greek Couscous Chicken With Lemon Dill Yogurt Sauce:

Start by marinating the chicken. Place the Greek yogurt, olive oil, lemon zest, lemon juice, dried oregano, minced garlic, salt and pepper in a medium sized bowl and mix the ingredients so they are well combined. Add the pounded chicken breasts to the marinade and refrigerate from 30 minutes up to 3 hours.

Because there is a good amount of lemon juice in the marinate I don’t recommend marinating overnight or over 3 hours, this can make the chicken tough.

While the chicken is marinating, make the lemon dill yogurt sauce by combining Greek yogurt, mayo, lemon zest, lemon juice, minced garlic, fresh dill, salt and pepper. Place into the refrigerator until it’s ready for use.

Heat a little olive oil in a skillet over medium/high heat. Add the marinated chicken breasts to the skillet and brown the chicken, 6-7 minutes per side. Add chicken broth to the skillet, place the lid on. Simmer on medium heat for 10-12 minutes, until the chicken is cooked through.

Remove the lid and pour couscous into the broth, around the chicken, making sure it’s evenly distributed. Place the lid back on and cook for a few more minutes until the liquid is fully absorbed.

Remove the skillet from the heat and let it rest for 5 minutes. Fluff the couscous with a fork. Slice the chicken and serve the with the lemon dill yogurt sauce.

Ingredients

  • 2 chicken breasts, pounded to even thickness
  • 1 1/2 cups chicken broth
  • 1 cup couscous

For The Marinade

  • 1/4 cup Greek yogurt
  • 1/4 cup olive oil
  • 2 lemons, zested and juiced
  • 1 tbsp dried oregano
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/4 tsp pepper

For The Lemon Dill Yogurt Sauce

  • 3/4 cup Greek yogurt
  • 2 tbsp mayo
  • 1 lemon, zested and juiced
  • 1 clove garlic, minced
  • 1 tbsp fresh dill, finely chopped
  • 1/2 tsp salt
  • 1/4 tsp pepper

Instructions

  • Combine marinade ingredients in a medium bowl. Add chicken to the marinade and refrigerate for 30 minutes.
  • In a small bowl, combine the lemon dill yogurt sauce ingredients. Refrigerate until ready to use.
  • Heat olive oil in a skillet over medium/high heat. Add chicken breasts to the skillet. Discard marinade. Brown chicken 6-7 minutes per side. Add chicken broth to the skillet, place lid on, and simmer on medium heat for 10-12 minutes, until chicken is cooked through.
  • Remove lid and pour couscous into the broth, around the chicken, making sure it's evenly distributed. Place the lid back on and cook on low for 3-4 minutes, until liquid is absorbed.
  • Remove from heat and let rest 5 minutes. Fluff couscous with a fork. Transfer chicken to cutting board and thinly slice. Place chicken back on top of the couscous and serve with lemon dill yogurt sauce.

  1. This recipe is so good! It adds a little Greek touch and big flavor to an easy dish to whip up on a week night. I added in some sauted zucchini for some extra color and it was great. That Greek yogurt serving sauce is so good I’m going to start putting it on everything!
