This fancy, yet simple, toast is smeared with a layer of creamy whipped ricotta, topped with toasted pistachios and drizzled with lemon thyme infused honey.
Whisk honey, thyme, and lemon juice together in a small bowl, set aside.
Place ricotta in food processor and pulse for 30 seconds to a minute until light and fluffy.
Smear whipped ricotta between the two bread slices. Sprinkle pistachios on top of the ricotta. Drizzle with lemon thyme honey. Sprinkle with salt and pepper. Serve immediately.
