Baked feta pasta is a simple but flavorful dish that comes together by baking feta, grape tomatoes, shallots, and herbs in the oven and tossed together with your favorite kind of pasta. It's cheesy, comforting, and incredibly delicious!
1/4cupfresh parsley, chopped (or other herbs on hand like thyme or oregano), plus more for garnish
1tspsalt
1/2tsppepper
1/2tspred pepper flakes
1/3cupolive oil, plus more for drizzling
1blockfeta cheese (10 oz)
12ozyour favorite pasta
Instructions
Preheat oven to 400 degrees F.
Place tomatoes, shallots, basil, parsley, salt, pepper, red pepper flakes, and half of the olive oil in a baking dish. Toss to combine.
Place block of feta cheese in the center of the baking dish. Drizzle the feta with remaining half of olive oil. Sprinkle with any additional herbs or pepper flakes, if desired.
Place into the oven and bake for 40 minutes. Tomatoes should look blistered and feta should be fully cooked through.
While feta is baking, cook the pasta according to package directions until al dente. Drain and set aside.
Once feta is finished baking, remove from oven. Mash the feta and tomatoes with a large wooden spoon. Add pasta to the baking dish and toss to combine. Garnish with additional herbs and drizzle with olive oil.
