Ingredients

  • 12 oz cherry or grape tomatoes
  • 2 shallots, sliced
  • 1/4 cup fresh basil, sliced, plus more for garnish
  • 1/4 cup fresh parsley, chopped (or other herbs on hand like thyme or oregano), plus more for garnish
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes
  • 1/3 cup olive oil, plus more for drizzling
  • 1 block feta cheese (10 oz)
  • 12 oz your favorite pasta

Instructions

  • Preheat oven to 400 degrees F.
  • Place tomatoes, shallots, basil, parsley, salt, pepper, red pepper flakes, and half of the olive oil in a baking dish. Toss to combine.
  • Place block of feta cheese in the center of the baking dish. Drizzle the feta with remaining half of olive oil. Sprinkle with any additional herbs or pepper flakes, if desired.
  • Place into the oven and bake for 40 minutes. Tomatoes should look blistered and feta should be fully cooked through.
  • While feta is baking, cook the pasta according to package directions until al dente. Drain and set aside.
  • Once feta is finished baking, remove from oven. Mash the feta and tomatoes with a large wooden spoon. Add pasta to the baking dish and toss to combine. Garnish with additional herbs and drizzle with olive oil.
