Blackberry Baked Brie Crostini

Brie is quiet the fancy cheese as is, but when it’s sliced and baked on a crostini with a homemade blackberry syrup, we’re talking next level appetizer.

Ingredients
  

Blackberry Syrup

  • 18 oz fresh blackberries, washed, divided in half
  • 1 tsp vanilla extract
  • 2 tbsp brown sugar
  • 1 medium lemon, juiced

Crostini

  • 1 baguette, sliced into ½ inch rounds
  • 8 oz brie cheese, cut into slices
  • handful of fresh mint leaves for garnish

Instructions
 

  • Preheat oven to 375 degrees F.
  • Combine half of the blackberries, vanilla extract, brown sugar, lemon juice, and 2 tbsp water in a small saucepan. (Set half of the blackberries aside to top the crostini with). Bring to a boil. Once boiling, reduce heat to med/low. Mash the blackberries using the back of a fork or spoon. Simmer for 10 minutes. Set aside to cool.
  • Arrange sliced baguette on a parchment lined baking sheet in one even layer. Bake for 3 minutes.
  • Remove from oven. Flip the bread slices over. Place a slice of brie cheese on each bread slice. Drizzle the blackberry syrup over the the brie crostini and place back into the oven. Bake for 10 minutes.
  • Remove from oven and drizzle the crostini with a little more blackberry syrup. Place a blackberry or two on each crostini and garnish with mint leaves.

Notes

TIP: The baking time will vary primarily based on your oven and your preference of how runny/warm you like your brie cheese. Personally, I like it as melted as I can get it, baking time for this is about 9-11 minutes. If you like your brie just a tad bit warm but not so much runny, remove it from the oven anywhere from 5-7 minutes.
