Chicken Caesar Pasta Salad

Let's make a classic Caesar salad but make it with hearty tender chicken, rotini pasta, and Pearls Garlic Stuffed Olives for a wholesome meal.

Ingredients
  

For the Salad:

  • 8 ounces dry rotini or penne pasta
  • 1½ to 2 cups diced chicken breast
  • 2 romaine lettuces chopped into bite-size pieces
  • ½ cup grated Parmesan cheese
  • 1 cup croutons
  • 1 cup Pearls Specialties Garlic Stuffed Olives sliced

For the Caesar Dressing:

  • ¾ cup mayonnaise
  • 1 teaspoon dijon mustard
  • 1 clove garlic
  • 2 anchovy fillets packed in oil
  • tablespoons lemon juice
  • ½ teaspoon pepper
  • ½ cup grated Parmesan

Instructions
 

  • Cook the pasta according to package directions. Drain the pasta and rinse with cold water to stop the cooking process. Drain well and set aside.
  • To make the dressing, add all of the dressing ingredients to a blender or food processor and blend until it's smooth and creamy.
  • Place the cooked pasta, romaine lettuce, chicken, Parmesan, croutons, and olives in a large bowl. Add the dressing and toss to combine. Add more dressing according to preference.
  • Serve immediately.
