Chicken Caesar Pasta Salad

Let's make a classic Caesar salad but make it with hearty tender chicken, rotini pasta, and Pearls Garlic Stuffed Olives for a wholesome meal.

For the Salad:
- 8 ounces dry rotini or penne pasta
- 1½ to 2 cups diced chicken breast
- 2 romaine lettuces chopped into bite-size pieces
- ½ cup grated Parmesan cheese
- 1 cup croutons
- 1 cup Pearls Specialties Garlic Stuffed Olives sliced
For the Caesar Dressing:
- ¾ cup mayonnaise
- 1 teaspoon dijon mustard
- 1 clove garlic
- 2 anchovy fillets packed in oil
- 2½ tablespoons lemon juice
- ½ teaspoon pepper
- ½ cup grated Parmesan
Cook the pasta according to package directions. Drain the pasta and rinse with cold water to stop the cooking process. Drain well and set aside.
To make the dressing, add all of the dressing ingredients to a blender or food processor and blend until it's smooth and creamy.
Place the cooked pasta, romaine lettuce, chicken, Parmesan, croutons, and olives in a large bowl. Add the dressing and toss to combine. Add more dressing according to preference.
Serve immediately.
