CHORIZO AND HASH BROWN BREAKFAST SLIDERS

Ingredients
  

  • 1 12 count package Hawaiian rolls
  • 1 pound chorizo
  • 1 onion diced
  • 2 cups hash browns frozen
  • 5 eggs
  • 2 cups mild cheddar cheese shredded
  • 1 tbsp butter melted

Instructions
 

  • Preheat oven to 375 degrees. Slice through the Hawaiian rolls horizontally and place the bottom of the rolls in a 13×9 baking dish.
  • In a medium pan, cook chorizo over medium heat for about 8-9 minutes. Remove from the pan and drain off excess oil.
  • In the same pan, cook the onion until translucent, about 3 minutes. Then cook the hash browns until golden, about 3 minutes on each side. Remove from pan.
  • Scramble eggs in the same pan until done, about 3 minutes.
  • Assemble all ingredients as listed. Place the top of the rolls on top and brush them with melted butter.
  • Bake in the oven for 15 minutes. Let cool for 5 minutes before serving.
