Preheat oven to 375 degrees. Slice through the Hawaiian rolls horizontally and place the bottom of the rolls in a 13×9 baking dish.
In a medium pan, cook chorizo over medium heat for about 8-9 minutes. Remove from the pan and drain off excess oil.
In the same pan, cook the onion until translucent, about 3 minutes. Then cook the hash browns until golden, about 3 minutes on each side. Remove from pan.
Scramble eggs in the same pan until done, about 3 minutes.
Assemble all ingredients as listed. Place the top of the rolls on top and brush them with melted butter.
Bake in the oven for 15 minutes. Let cool for 5 minutes before serving.
