- 2 chipotle peppers in adobo sauce, finely chopped

- 1 tablespoon tomato paste
- ½ teaspoon smoked paprika
- 3½ cups beef broth

- ½ cup heavy cream
For The Bowls
- Cooked jasmine rice
- Pickled red onions
- Fresh cilantro, chopped
- Lime wedges
For the Crispy Beef
Heat avocado oil in a large skillet over medium/high heat. Once hot, add the ground beef. Spread it over the skillet in an even layer. Leave it undisturbed to let cook and create some crispy edges. Let it cook for 3-5 minutes.
Break the beef into smaller pieces. Add the garlic, cumin, smoked paprika, chili powder, oregano, salt, and pepper. Stir and continue cooking until the beef is almost cooked through. Drain any excess grease, if needed.
While beef is cooking, in a small bowl, whisk together the ¼ cup beef broth, honey, and white wine vinega. Set aside.
Reduce the heat to medium and pour the honey-broth mixture over the beef. Stir to coat evenly, then let the beef cook undisturbed for another 2–4 minutes, until liquid fully reduces and starts to caramelize on the bottom, about 2-4 minutes. Remove from heat.
For the Broth
Heat the avocado oil in a separate saucepan over medium heat. Add the onion and cook for 3–4 minutes, until softened.
Stir in the chipotle peppers, adobo sauce, tomato paste, and smoked paprika. Cook for 1–2 minutes, stirring frequently, until fragrant.
Pour in the beef bone broth, stirring to incorporate the tomato paste and scrape up any brownedq bits from the bottom of the pan. Bring to a gentle simmer and cook uncovered for 10–15 minutes to allow the flavors to develop.
Whisk in the lime juice and heavy cream. Simmer gently for 1 minute, then remove from the heat.
Assemble the Bowls
Add a generous scoop of warm jasmine rice to each serving bowl. Arrange the crispy ground beef next to the rice, then ladle the creamy chipotle broth over the rice and beef.
Finish with sliced avocado, pickled red onions, and fresh cilantro. Serve with lime wedges for squeezing over the top.
