Cuisine American
- 2 pounds sirloin steak (new york strip or ribeye will work too), cut into 1-inch cubes
- ½ teaspoon red pepper flakes
- 3 tablespoons avocado oil (or another high-heat oil)
- 6 tablespoons unsalted butter
- 8 cloves garlic, minced
- 12 ounces fresh green beans, ends trimmed
- 1 tablespoon chopped parsley, plus more for garnish
- salt and pepper, to taste
Season the steak with salt, pepper, and red chili flakes.
Heat a large skillet over medium/high heat, making sure it's sizzling hot before adding the oil.
Add avocado oil to the skillet along with the steak. Make sure the steak is not touching or overlapping. This will help achieve perfect browning on the steak pieces. You may need to do this in two separate batches. Cook each side for 1 minute and transfer to a plate.
Clean the skillet out before cooking the green beans.
Reduce heat to medium and melt butter in the same skillet.
Add the garlic, green beans, parsley, salt, pepper, and 2 tablespoons of water. Cover with a lid and steam for 5-6 minutes. Remove the lid. Stir the green beans and cook until water is completely evaporated. Transfer to a plate, leaving behind the garlic.
Add the steak and the juices back to the skillet. Toss the steak to coat in the garlic butter. Push the steak to the side of the skillet. Return the green beans alongside the steak.
Spoon the garlic butter over. Season with additional salt and pepper, if needed. Garnish with additional parsley and serve.
