Healthy Taco Turkey Burrito Bowls

Ingredients
  

  • 1 cup brown rice
  • 2 pounds extra lean ground turkey
  • 1 1/2 tbsp taco seasoning
  • 1 (15oz) can corn
  • 3 tomatoes
  • 1/2 red onion
  • 2 limes cut into wedges
  • 2 avocados
  • 1/2 cup Mexican blend shredded cheese
  • 2 tbsp olive oil
  • handful cilantro chopped and divided

Instructions
 

  • Cook rice according to package directions; set aside.
  • Heat olive oil in a large skillet over medium/high heat. Add ground turkey and taco seasoning. Break apart the turkey as it cooks, about 6-7 minutes.
  • While the turkey is cooking, prep the pico de gallo. Dice tomatoes and red onion. In a medium size bowl, combine tomatoes, onion, pinch of cilantro, and a squeeze of one lime wedge.
  • Divide all ingredients evenly among 4 bowls. Start with rice, then turkey, corn, pico de gallo, half of an avocado, sprinkle with cheese and cilantro, serve with lime on the side.
