Place a 10 inch cast iron skillet(or any oven-safe skillet) into the oven and preheat oven to 425 degrees F.
In a blender or food processor, combine eggs, milk, flour, butter, salt, and pepper. Blend until well combined.
Pour batter into a medium bowl. With a fork, hand mix half of the parmesan and half of the chives into the batter.
Remove skillet from oven. With a nonstick cooking spray, coat inside of the skillet.
Pour batter into the hot skillet.
Top with the rest of the parmesan and chives.
Return skillet to oven and bake for 20-22 mins. Serve.
