Sweet & Spicy Roasted Sweet Potatoes

Perfectly roasted sweet potatoes are coated in a sweet & spicy mix, topped with Pearls Specialties Garlic & Jalapeño Stuffed Olives, crumbled goat cheese and toasted pumpkin seeds for a punch of flavor.

Ingredients
  

  • 1 cup Pearls Specialties Garlic & Jalapeño Stuffed Olives, halved or sliced
  • 3½-4 cups peeled & ½-inch cubed sweet potatoes
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon cayenne pepper
  • ¼ cup crumbled goat cheese
  • 1 tablespoon toasted pumpkin seeds
  • Salt and pepper, to taste

Instructions
 

  • Preheat the oven to 425 F. Line a large baking sheet with parchment paper. Set aside.
  • Place sweet potatoes in a large bowl. Drizzle with olive oil and add maple syrup, paprika, garlic powder, chili powder, cayenne, salt, and pepper. Toss to coat well.
  • Spread sweet potatoes out onto the prepared baking sheet.
  • Bake for 30-35 minutes, flipping the sweet potatoes half way through baking time.
  • Transfer the roasted potatoes to a serving plate.
  • Top with olives, goat cheese, and pumpkin seeds. Serve immediately.
