TOMATO AND CHEDDAR TUNA MELTS

Ingredients
  

  • 4 slices sourdough bread
  • 1 (12oz) can white albacore tuna, drained
  • 1/4 cup pickles finely diced
  • 1/4 cup green onions sliced
  • 1 hard boiled egg diced
  • 1/3 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/4 teaspoon pepper
  • 1 tomato thinly sliced into 8 slices
  • 1 cup sharp cheddar cheese shredded

Instructions
 

  • Preheat the broiler. Spread the sliced bread out on a baking sheet and toast it for 3 minutes. Remove from oven and set aside.
  • In a medium bowl, break the tuna apart with a fork. Toss together pickles, green onions, hard boiled egg, mayonnaise, lemon juice, and pepper.
  • Spread out the tuna mixture on the toasted bread slices. Top with tomatoes and cheddar cheese.
  • Place back into the oven under the broiler until cheese is melted, about 3-5 minutes. Serve immediately.
