Instructions
Heat olive oil in a pot over medium heat. Saute the celery, onion and carrots until soft, about 3 mins.
Add the red pepper to the pot and continue to saute for about 2 more minutes.
Add chicken broth, diced potatoes, cream of corn, chili powder, Italian seasoning, red chili flakes(optional), brown sugar, salt, and pepper to the pot. Bring to a boil. Cover and simmer on medium/low for 20 mins.
Add shredded turkey and half and half. Stir until half and half is well incorporated and heated through, about 2 mins.
