Blueberry Baked Oatmeal With Almond Slices

Baked Oats are one of those things that you mix in a bowl and dump into a baking dish for baking. The results turn out 10/10 every time. This oatmeal casserole dish has taken over our traditional chocolate overnight oats and we don’t mind it one bit. Throughout the week, I take out the casserole dish, cut a slice (most of the time a fairly large slice), and heat it up for breakfast.

This makes a mean breakfast meal prep that will get you thinking however did you do it before these warm, comforting blueberry baked oats came into your life.

Let’s make them together, shall we..

First bowl: mix oats, baking powder, and salt.

Second bowl: whisk milk, eggs, vanilla, maple syrup or brown sugar.

Spread half of the oat mixture into the baking dish in an even layer. Arrange half of the blueberries across the oats. Repeat the next two layers with remaining oats and blueberries.

Evenly pour the milk/egg mixture over the oats so they are all coated. Shake the dish to make sure the liquids move down and through the oats. Sprinkle a good dose of sliced almonds and bake until the edges are golden brown and your house smells like toasted blueberry oatmeal cookies.

A few variations to try:

Milk: use regular milk, whole milk, almond milk, soy milk, whatever you have on hand. I’ve tried baked oats with all kinds of milk and it turns out great every time.

Oats: my favorite are the basic rolled oats. Those are the ones I use here, but this recipe can be made gluten-free by using gluten-free oats. Quick oats work great too!

Berries: blueberries are my jam but other berries are cool too. If you love strawberries, slice them up and throw them in instead. This applies to apples, peaches, bananas, the list goes on.

Ingredients

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 3/4 cups milk (regular or dairy-free), plus additional for serving
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup maple syrup
  • 1-1 1/2 cups blueberries (fresh or frozen)
  • 1/4 cup sliced almonds

Instructions

  • Preheat oven to 350 degrees F. Spray a 9×9 inch baking dish or a medium oven-proof skillet with non-stick cooking spray. Set aside.
  • Combine oats, baking powder, and salt in a large bowl. In another bowl, whisk together milk, eggs, vanilla, and maple syrup.
  • Spread half of the oat mixture into the baking dish in an even layer. Arrange half of the blueberries across the oats. Repeat the next two layers with remaining oats and blueberries. Evenly pour the milk/egg mixture over the oats so they are all coated. Shake the dish to make sure the liquids move down and through the oats. Sprinkle the top with sliced almonds.
  • Place into the oven and bake for 40-45 minutes, just until the edges are golden brown. Remove from oven. Let cool 5 minutes. Serve with a splash of milk.

Notes

Cut up baked oats into squares and store in an air tight container in the refrigerator for up to 5 days. Reheat as needed.
