Banana Pecan Baked Oats

Banana Pecan Baked Oats

For the longest time, overnight oats have been my jam. Lately, I’ve decided to try these baked oats and have been digging them for a change.

The entire recipe for baked oats is overall simple. You take two bowls. Mix some oats and dry ingredients in the first one. In the second bowl, mix the wet ingredients. Place the dry oat ingredients in a baking dish or skillet and pour the wet ingredients over. That’s really it.

My husband walked into the kitchen this morning and asked if I was baking cookies. I paused and said, “Yeah, something like that.” That’s exactly what this smell like when it’s baking, a freshly baked batch of soft cinnamon cookies.

Banana Pecan Baked Oats

To Make This Banana Pecan Baked Oats:

You will need to mix together oats, cinnamon, baking powder, and salt in a large bowl. Then in another bowl, whisk together milk, eggs, mashed banana, vanilla, melted butter, and maple syrup.

Spread the dry oat mixture into an oven proof baking dish into an even layer. Sprinkle a few pecans over the top of the oats. Then, evenly pour the milk and egg mixture right over the oats so that everything is coated with the liquid. You may use a fork or spoon to help spread/drag the liquid across the oats. You want everything coated well, otherwise, parts of the oats will be dry!

Place into the oven and bake for 40-45 minutes under 350 degrees F. The edges will turn golden brown and the center will look firm. To serve, sprinkle baked oats with additional pecans, sliced bananas, and maple syrup.

Ingredients

  • 2 cups rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups milk
  • 3 eggs
  • 2 bananas. Mash one banana and use in recipe. Slice the second one and sprinkle on top of baked oats when finished.
  • 1 tsp vanilla
  • 3 tbsp melted butter
  • 1/4 cup maple syrup, plus additional for drizzling
  • 1/4 cup toasted pecans, roughly chopped, plus additional for topping

Instructions

  1. Preheat oven to 350 degrees F. Spray a baking dish or an oven-proof skillet with non-stick cooking spray. Set aside.

  2. Combine oats, cinnamon, baking powder, and salt in a large bowl. In another bowl, whisk together milk, eggs, mashed banana, vanilla, melted butter, and maple syrup.

  3. Spread the oat mixture into the baking dish into an even layer. Sprinkle pecans across the oats. Evenly pour the milk/egg mixture over the oats so they are all coated. Place into the oven and bake for 40-45 minutes, just until the edges are golden brown. Remove from oven. Let cool 5 minutes. Sprinkle with additional pecans, sliced banana, and maple syrup and serve.

Recipe Notes

Cut up baked oats into squares and store in an air tight container in the refrigerator for up to 5 days. Reheat as needed.
