French Onion Chicken

French Onion Chicken

In a world, where chicken meets french onion soup, the two are simply combined to bring you this delicious chicken cooked in caramelized onion broth.

To make this dish, start with pounding the chicken to flatten and even it out. Next, browning the chicken breasts. Once browned, set them aside on a plate. They will finish cooking in the oven.

Next are the onions. Sauté them in butter until they are caramelized and soft, the part takes 15 minutes but oh sooo worth it! Then, sprinkle flour over the onions and add beef broth. Once boiling, the chicken can then be added back to the skillet. The french onion chicken dish gets topped with cheese and baked until melted. And last, spoon the onion broth over the melted cheese and chicken breasts.

A few sides that can be served with this main meal are: Roasted Sheet Pan Veggies, Roasted Maple Butternut Squash And Brussels Sprouts, or Mixed Green Salad With Balsamic Vinaigrette.

Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • 4 tbsp butter, unsalted
  • 2 yellow onions, thinly sliced
  • 1 tbsp flour
  • 2 cups beef broth
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tsp Italian seasoning
  • 8 slices provolone cheese
  • parsley or thyme, to garnish

Instructions

  1. Preheat oven to 350 degrees F.

  2. Lay chicken out on a clean surface. Cover chicken with plastic wrap and pound to an even thickness. Season chicken with salt and pepper.

  3. In a large, oven-proof pan, over medium-high heat, add olive oil. Saute each side of the chicken breasts 3-4 minutes until browned on both sides. Transfer to a plate.

  4. In the same pan, melt butter over medium-low heat. Add onions and saute for 15 minutes until caramelized, stirring occasionally.

  5. Sprinkle flour over the onions, continue to saute for 2 more minutes. Add beef broth, salt, pepper, and Italian seasoning to the pan and stir to combine. Bring to a boil. Add the chicken back to the pan and spoon the onion broth over the chicken. Place into oven and bake for 15 minutes. Remove from oven, place 2 slices of cheese over each chicken, and place back into the oven for the cheese to melt. Bake for 10 more minutes.

  6. Spoon onion broth over the chicken. Garnish with parsley or thyme.

Recipe Notes

If you do not have an oven-safe pan, you may use an oven-safe baking pan instead. Follow the recipe and assemble sauteed onions then chicken in the casserole dish. Then, follow the baking directions.
