When the weather heats up, I start reaching for no-cook, no-bake, no-boil recipes that are fresh, simple, and require little to no effort. This Watermelon, Cucumber, and Feta Checkerboard Salad checks every box. It’s crisp, juicy, salty, sweet, and honestly just so pretty sitting on my counter. Not even kidding, I didn’t put it away until Val came home so he can get a visual of how pretty this thing was. 😂

- Watermelon – Seedless watermelon works best here since it makes the salad easier to eat and keeps the presentation clean.
- Mini Cucumbers – Mini cucumbers (the little Persian ones are another name for them) are extra crisp and have fewer seeds than traditional cucumbers.
- Feta Cheese – Use a block of feta in brine, the crumbled feta won’t work here.
- Honey – A light drizzle of honey enhances the natural sweetness of the watermelon and ties all the flavors beautifully together.
- Balsamic Pearls or Balsamic Glaze – Balsamic pearls add a fun pop of texture and look gorgeous on top of the feta cubes. I’ve had them gifted to me and they’ve been sitting in my pantry for almost a year. I’ve been trying to figure out where I can use them and they came along beautifully for this salad. If you can’t find them, a drizzle of balsamic glaze works just as well. 🙂

- Cut the watermelon, cucumber, and feta into similarly sized cubes for the prettiest checkerboard effect. If they’re a bit off, don’t sweat it! If you look closely at mine, some pieces have irregular cuts. The overall presentation is going to look so good and no one will even notice it
- Pat the feta dry before arranging to prevent excess moisture on the platter.
- Assemble the salad shortly before serving for the freshest texture.
- Since feta already brings plenty of saltiness to the dish, think twice before adding more salt. Flakes of salt would look pretty but might be much. If you prefer dishes on the more saltier end, start with a little salt.
- Chill the ingredients beforehand so the salad is extra refreshing when served.

Watermelon, Cucumber, And Feta Checkerboard Salad
Ingredients
- ¼ seedless watermelon, cut into 1-inch cubes
- 4 mini cucumbers, cut into 1-inch pieces
- 8 ounces feta cheese, cut into 1-inch cubes
- 1 tablespoon honey
- 1½ tablespoons balsamic pearls (or balsamic glaze)
- 1 tablespoon sliced fresh mint
- Salt and pepper, to taste
Instructions
- On a large plate or platter, arrange the watermelon, cucumber, and feta by alternating between them until the platter is covered.
- Drizzle with honey. Spoon the balsamic pearls over the feta cubes, I like to keep it on the feta for a pop of color/contrast. Garnish with fresh mint. Season with salt and pepper, to taste, keep in mind, the feta is salty to start with. Enjoy!
