Overnight French Toast

This fluffy Overnight French Toast is assembled and soaked the night before, then baked in the morning. Has a touch of cinnamon and vanilla and is super easy to whip up. (Jump to Recipe)

Overnight French Toast

Super soft slices of brioche bread are soaked in a cinnamon and vanilla egg mixture. Then, baked until it’s custardy underneath and has a light golden top. Last, sprinkled with powdered sugar and drizzled with sweet maple syrup.

This overnight french toast casserole is great for feeding a crowd. The 10-minute prep work is done the night before. Just pop it in the oven in the morning and in minutes you’ll have a crowd pleaser! And your home will smell like toasted cinnamon.

If you want to make this for two people, cut the recipe in half and make it in a smaller baking dish. Also, take 5 minutes off the baking time.

Challah or baguette can be used as a substitute for brioche if you are having a hard time locating it in your local grocery store.

Overnight French Toast

Here are a few things I learned along the way to get this Overnight French Toast just right.

Stale or dry bread. Dry bread soaks up the egg mixture better then regular, soft, fluffy bread. I like to open the bag of brioche 8-24 hours prior to soaking it so it can start drying out. If you want to skip this part, toast the bread on a sheet pan on 350 degrees F. for 10-12 minutes, until it’s slightly crisp. Arrange the slices of bread in a 9 x 12 casserole dish.

Cinnamon vanilla egg mixture. Whisk all of the ingredients in a large bowl and pour over your bread slices, evenly. Cover it with plastic wrap and pop it in your refrigerator.

Baking. I like to pull it out of the refrigerator about 1 hour prior to baking it. This helps it come to room temperature (may still be a little chilled, but shouldn’t be totally cold) and also helps with even baking. Once it’s finished baking, drizzle maple syrup and dust with powdered sugar as soon as it comes out of the oven.

Serve. Fresh berries or sliced bananas go so well with this on the side. You may also use fresh seasonal fruit or fruit jam on the side.

Ingredients

  • 1 cup milk
  • 4 eggs
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 2 tsp vanilla extract
  • pinch of salt
  • 1 tbsp unsalted butter, to butter the casserole dish
  • 1 loaf of brioche bread, sliced (about 8-10 slices)
  • 1/3 cup maple syrup
  • 2 tbsp powdered sugar

Instructions

The Night Before

  • In a medium bowl, whisk together milk, eggs, sugar, cinnamon, vanilla, and salt. Set aside.
  • Lightly butter the sides and bottom of a 9 x 13 casserole dish. Arrange brioche bread slices in two rows, slightly overlapping one another. Pour the egg mixture evenly over the arranged slices of bread. Cover with plastic wrap and place into the refrigerator overnight.

Day Of Baking

  • Remove casserole dish from the refrigerator about 1 hour prior to baking.
  • Preheat oven to 350 degrees F. Place into oven and bake for 30 minutes, until the top is golden brown.
  • Once it’s finished baking, drizzle maple syrup and dust with powdered sugar as soon as it comes out of the oven.
  • Serve with fresh berries or sliced bananas on the side. You may also use fresh seasonal fruit or fruit jam on the side.
