The famous BJ’s pizookie came to visit us today. It was a good day. Now all days after today will have to measure up to this for it to be a good one. This skillet cookie is gooey in the center and crisp on the edges. There really is no better cookie served warm straight from the oven with a few scoops of vanilla ice cream.

How To Make A Giant Chocolate Chip Skillet Cookie:

Make the dough:

I start off with making a traditional chocolate chip cookie dough. If you have a favorite chocolate chip cookie recipe, use it! Otherwise, use the one below in the recipe card.

Place into the skillet:

I managed to learn a trick to show you for this part. When laying out the cookie dough into the skillet, use damn hands to press the dough down and push it towards the edge of the skillet. This trick will prevent the dough from sticking to your hands.

I used a 10 inch cast iron skillet here. An oven-safe stainless steel skillet or baking dish may also be used.

Bake:

At 375 degrees F, bake this giant cookie for 20-22 minutes until the edges are nice and crisp. If you like your chocolate chip cookies extra soft, pull it out after 18 minutes so it stays gooey in the center.

If you will be using a stainless steel skillet, your cooking time will vary. Because the skillet is thin, your cookie will bake quicker, and you will need to pull it out 2-5 minutes sooner.

Once it’s finished baking, pull it out and let it cool until it’s safe to eat from the skillet. Pile on the ice cream and dig in!

Ingredients

  • 1/3 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup unsalted butter, at room temperature
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp sea salt
  • 1/2 cup semi-sweet chocolate chips
  • vanilla ice cream, for serving

Instructions

  1. Preheat oven to 375 degrees F.

  2. In a large bowl, whisk granulated sugar, brown sugar, and butter together for 1 minute. Add in the egg and vanilla extract and whisk until creamy. Stir in the flour, baking soda, and salt. Mix until well combined. Fold in 1/4 cup of the chocolate chips.

  3. Transfer batter to a 10 inch skillet. Press the batter into the skillet using damp hands. Evenly distribute across the skillet. Sprinkle the rest of the chocolate chips on top and place into the oven.

  4. Bake for 20-22 minutes until the edges are crisp. If you like your chocolate chip cookies extra soft, pull it out after 18 minutes so it stays gooey in the center.
