Quick And Easy Spaghetti With Blistered Cherry Tomato Sauce

This dish is inspired from Cheese Ravioli With Blistered Cherry Tomato Sauce. Instead of ravioli, I use spaghetti but I keep the blistered cherry tomato sauce the same. This spaghetti dish is one of the most least fussy pasta dishes you can make with minimal ingredients to take it to the next level! The cherry tomatoes are one of the most important ingredients so try to use fresh, good quality ones along with a high quality olive oil. You’ll have this dinner whipped up in less then 30 minutes!

Ingredients

  • 2 tbsp olive oil, plus more for drizzling
  • 2 cloves garlic, minced
  • 16 oz cherry tomatoes, halved lengthwise
  • 1/4 tsp salt
  • 16 oz package of spaghetti
  • handful of fresh basil, sliced
  • 1/4 cup parmesan, grated
  • fresh cracked pepper, for garnish

Instructions

  • Bring a large stockpot of salted water to a boil, add the spaghetti and cook according to the package directions. Drain and set aside.
  • In a large skillet over medium heat, add oil and garlic. Sauté for 30 seconds. Add cherry tomatoes and salt. Let it cook for 10 minutes. Stirring occasionally. Transfer cooked pasta to the skillet and toss with the blistered tomatoes.
  • Garnish with basil, parmesan, and fresh cracked pepper. Drizzle with additional olive oil if preferred.
