Chocolate Chip Cookie Brownie Bars (Brookies)

Equal layers of the two of the best desserts of all time. Nothing beats that.

First, the brownie batter is mixed and set into the pan. Second, the chocolate chip cookie dough is mixed and arranged on top of the brownie batter. The whole dish is then baked. This is the ultra-rich, decadent dessert that brings together the best of both worlds.

Ingredients

For The Brownie

  • 1/4 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 1/2 cup all-purpose flour
  • 1/4 cup dark cocoa powder
  • 1/4 tsp salt

For The Cookie

  • 1/3 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter, room temperature
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350 degrees F. Line an 8-inch square baking pan or dish with parchment paper. Set aside.

  2. Whisk the butter, sugar, vanilla, and egg in a medium bowl. Fold in the flour, cocoa powder, and salt. Mix with a wooden spoon or rubber spatula until well combined. Transfer batter to prepared baking pan. Use the rubber spatula to even it out flat or use damp hands to push it down and spread it out.

  3. For the cookie dough, whisk granulate sugar, brown sugar, and butter together for 1 minute in a medium bowl. Add in the egg and vanilla extract and whisk until creamy. Fold in the flour, baking soda, and salt. Mix with a wooden spoon or rubber spatula until well combined. Fold in chocolate chips. Evenly spread the mixture on top of the brownie layer.

  4. Place into oven and bake for 35 minutes until a toothpick inserted into the center comes out clean. Let cool 10 minutes before slicing into squares.
