Cheese Ravioli With Light Cherry Tomato Sauce

Using good, quality ripe cherry tomatoes and cheese ravioli are going to be everything in this recipe, since they are the main ingredients. You’ll have this dinner whipped up in less then 20 minutes!

Cheese Ravioli With Blistered Cherry Tomato Sauce

Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 16 oz cherry tomatoes halved, lengthwise
  • 1/4 tsp salt
  • 2 (9 oz) packages of fresh cheese ravioli
  • handful of fresh basil, sliced
  • 1/4 cup parmesan, grated
  • fresh cracked pepper

Instructions

  1. In a large pan over medium heat, add oil and garlic. Sauté for 30 seconds. Add cherry tomatoes and salt. Let it cook for 10 minutes. Stirring occasionally.

  2. In the meantime, bring a large stockpot of salted water to a boil, add the ravioli and cook according to the package directions. If you are using home-made ravioli, cook for 5-6 minutes, until cooked al dente. Drain the pasta and toss with the cherry tomato sauce. Garnish with basil, parmesan, and fresh cracked pepper.
