Tomato and Cheddar Tuna Melts
When I think of tuna melts, I think of a warm meal that comes together quickly and helps you resist fast food runs on those busy weeknights. Not that fast food runs are negatively looked on in any way (except the fact that they tend to happen more often then not).
Throw a few of these staple ingredients together, spread it on a crusty slice of sourdough, top it with tomatoes and cheddar cheese and.. VOILA! Dinner is done!
TOMATO AND CHEDDAR TUNA MELTS
Ingredients
- 4 slices sourdough bread
- 1 (12oz) can white albacore tuna, drained
- 1/4 cup pickles finely diced
- 1/4 cup green onions sliced
- 1 hard boiled egg diced
- 1/3 cup mayonnaise
- 1 tbsp lemon juice
- 1/4 teaspoon pepper
- 1 tomato thinly sliced into 8 slices
- 1 cup sharp cheddar cheese shredded
Instructions
- Preheat the broiler. Spread the sliced bread out on a baking sheet and toast it for 3 minutes. Remove from oven and set aside.
- In a medium bowl, break the tuna apart with a fork. Toss together pickles, green onions, hard boiled egg, mayonnaise, lemon juice, and pepper.
- Spread out the tuna mixture on the toasted bread slices. Top with tomatoes and cheddar cheese.
- Place back into the oven under the broiler until cheese is melted, about 3-5 minutes. Serve immediately.
