Ingredients

  • 2 cups rolled oats
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 cups milk
  • 3 eggs
  • 2 bananas. Mash one banana and use in recipe. Slice the second one and sprinkle on top of baked oats when finished.
  • 1 tsp vanilla
  • 3 tbsp melted butter
  • 1/4 cup maple syrup, plus additional for drizzling
  • 1/4 cup toasted pecans, roughly chopped, plus additional for topping

Instructions

  • Preheat oven to 350 degrees F. Spray a baking dish or an oven-proof skillet with non-stick cooking spray. Set aside.
  • Combine oats, cinnamon, baking powder, and salt in a large bowl. In another bowl, whisk together milk, eggs, mashed banana, vanilla, melted butter, and maple syrup.
  • Spread the oat mixture into the baking dish into an even layer. Sprinkle pecans across the oats. Evenly pour the milk/egg mixture over the oats so they are all coated. Place into the oven and bake for 40-45 minutes, just until the edges are golden brown. Remove from oven. Let cool 5 minutes. Sprinkle with additional pecans, sliced banana, and maple syrup and serve.

Notes
