2bananas. Mash one banana and use in recipe. Slice the second one and sprinkle on top of baked oats when finished.
1tspvanilla
3tbspmelted butter
1/4cupmaple syrup, plus additional for drizzling
1/4cuptoasted pecans, roughly chopped, plus additional for topping
Instructions
Preheat oven to 350 degrees F. Spray a baking dish or an oven-proof skillet with non-stick cooking spray. Set aside.
Combine oats, cinnamon, baking powder, and salt in a large bowl. In another bowl, whisk together milk, eggs, mashed banana, vanilla, melted butter, and maple syrup.
Spread the oat mixture into the baking dish into an even layer. Sprinkle pecans across the oats. Evenly pour the milk/egg mixture over the oats so they are all coated. Place into the oven and bake for 40-45 minutes, just until the edges are golden brown. Remove from oven. Let cool 5 minutes. Sprinkle with additional pecans, sliced banana, and maple syrup and serve.
Notes
Cut up baked oats into squares and store in an air tight container in the refrigerator for up to 5 days. Reheat as needed.
