Blackberry Fig Crostini

Make summertime entertaining easy and beautiful with these blackberry fig crostini. Pick up those fresh seasonal fruit and put them to good use, it doesn’t get sweeter than this

Ingredients
  

  • 1 baguette
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tsp fresh thyme, finely chopped
  • 1 tsp lemon juice
  • 1/2 cup goat cheese
  • 1 cup blackberries
  • 6-8 figs, thinly sliced

Instructions
 

  • Preheat oven to 400 degrees F.
  • Slice baguette into 1/2 inch thick slices. Place in a single layer on a sheet pan. Drizzle with olive oil and bake for 5 minutes. Remove from oven and let cool.
  • Combine honey, thyme, and lemon juice in a small bowl, set aside.
  • Spread a layer of goat cheese on each baguette slice, top with blackberries and sliced fig. Drizzle with honey/thyme mixture right before serving.

Notes

If the blackberries are rather large in size, slice them in half before using.
