Blackberry Fig Crostini

I’m one of those people who have a hard time buying berries in the winter, just because I know they’re not going to be as sweet as the summertime ones. I wait almost all year to buy the plump, juicy berries and when I do, they get their most deserved spotlight, like they should.

These blackberry fig crostini are made with a sliced toasted baguette, goat cheese as the base, topped with sliced figs and blackberries, and last drizzled with sweet honey and thyme.

Ingredients

  • 1 baguette
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tsp fresh thyme, finely chopped
  • 1 tsp lemon juice
  • 1/2 cup goat cheese
  • 1 cup blackberries
  • 6-8 figs, thinly sliced

Instructions

  1. Preheat oven to 400 degrees F.

  2. Slice baguette into 1/2 inch thick slices. Place in a single layer on a sheet pan. Drizzle with olive oil and bake for 5 minutes. Remove from oven and let cool.

  3. Combine honey, thyme, and lemon juice in a small bowl, set aside.

  4. Spread a layer of goat cheese on each baguette slice, top with blackberries and sliced fig. Drizzle with honey/thyme mixture right before serving.

Recipe Notes

If the blackberries are rather large in size, slice them in half before using.
