Remove pork chops from refrigerator and let rest at room temp. about 15 minutes before grilling, this will help with even cooking. Preheat grill to medium/high heat.
To make the BBQ sauce: heat olive oil in a medium saucepan over medium heat. Add garlic, cook for 1 minute. Add tomato paste and cook for 2 minutes while stirring. Add the remaining ingredients and simmer for 10 minutes while stirring occasionally. Remove from heat.
Season both sides of pork chops with salt and pepper. Grill pork chops 5-7 minutes per side or until cooked through. Baste pork chops with 1/3 cup of BBQ sauce the last 2 minutes of grilling. Transfer pork chops onto a serving dish. Baste pork chops once more with BBQ sauce and serve remaining sauce alongside.
