Lemon Basil Whipped Ricotta Toasts

Crispy toasted baguette slices are topped with creamy whipped ricotta that’s lightly sweetened with honey and brightened with fresh lemon juice. A generous sprinkle of lemon zest and fresh basil finishes everything off with the most refreshing flavor combination.

- 1 baguette, diagonally sliced
- 1 tablespoon olive oil
- ¾ cup whole milk ricotta cheese
- 2 tablespoons honey
- 1 tablespoon fresh lemon juice
- ¼ teaspoon kosher salt
- ⅛ teaspoon fresh cracked black pepper
- 1 lemon, zested
- 2 tablespoons sliced fresh basil leaves
Preheat oven to 425 F.
Place the baguette slices onto a baking sheet. Drizzle with olive oil. Place into the oven and bake for 8 to 10 minutes until slightly golden around the edges.
Add the ricotta, honey, lemon juice, salt, and pepper to a food processor. Blend for 30 seconds to 1 minute until smooth and fluffy.
Place the ricotta into a piping bag or a resealable bag. Cut off about 3 mm of the corner of the bag. Pipe the whipped ricotta onto the toasted bread slices into a ribbon pattern. Or you may simply spread the whipped ricotta using a spoon.
Top with lemon zest and sliced basil. Serve immediately.
