These Lemon Basil Whipped Ricotta Toasts are what I make when I want something that feels a little fancy but takes almost no effort at all. It feels nice to have a little treat sitting on the counter for when Val comes home from work to enjoy with his coffee. The crunchy golden bread paired with the silky smooth ricotta is what makes these toasts so good. Brunch, afternoon snack, or an easy appetizer for guests? ..just watch how fast they disappear.

Ingredients
  

  • 1 baguette, diagonally sliced
  • 1 tablespoon olive oil
  • ¾ cup whole milk ricotta cheese
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • ¼ teaspoon kosher salt
  • teaspoon fresh cracked black pepper
  • 1 lemon, zested
  • 2 tablespoons sliced fresh basil leaves

Instructions
 

  • Preheat oven to 425 F.
  • Place the baguette slices onto a baking sheet. Drizzle with olive oil. Place into the oven and bake for 8 to 10 minutes until slightly golden around the edges.
  • Add the ricotta, honey, lemon juice, salt, and pepper to a food processor. Blend for 30 seconds to 1 minute until smooth and fluffy.
  • Place the ricotta into a piping bag or a resealable bag. Cut off about 3 mm of the corner of the bag. Pipe the whipped ricotta onto the toasted bread slices into a ribbon pattern. Or you may simply spread the whipped ricotta using a spoon.
  • Top with lemon zest and sliced basil. Serve immediately.
