Mini apple crisps are a classic fall dessert with flavors of seasonal apples, cinnamon, and oats. Baked in individual cups and served with a scoop of vanilla ice cream.
Preheat oven to 375 degrees F.
Combine sliced apples, lemon juice, and vanilla extract in a large bowl. Toss to coat. Divide apples mixture between 4 mini ramekins or mini pie pans.
Combine oats, brown sugar, cinnamon, and salt in another bowl. Cut in the butter and mix until the butter is well incorporated with the oats. Sprinkle the oat mixture over the apples.
Transfer ramekins to a baking sheet. Place into oven and bake for 35 minutes. Serve with vanilla ice cream.
