The Ultimate Vegan-Veggie Sandwich

Ingredients
  

  • 4 slices whole wheat bread
  • 1/2 cucumber thinly sliced
  • 1 tomato thinly sliced
  • handful alfalfa sprouts
  • 1/3 cup pepperoncini sliced
  • 1/4 red onion thinly sliced
  • 1 tbsp olive oil
  • 1/2 tbsp red wine vinegar
  • salt and pepper to taste
  • 2 avocados

Instructions
 

  • Spread hummus on 2 slices of bread. Top with cucumber, tomatoes, alfalfa sprouts, pepperoncini, and red onions. Drizzle olive oil and red wine vinegar. Sprinkle with salt and pepper.
  • On the other 2 slices of bread, use the back of a fork to mash and spread the avocados. Top your sandwich and enjoy!
