For the Kebab Roll-Ups
- 1 pound ground beef (85/15)
- ½ medium onion, grated
- 3 garlic cloves, minced
- 2 tablespoons chopped fresh parsley, plus more for garnish
- 2 tablespoons chopped fresh cilantro
- 2 teaspoons paprika
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 4 large flour tortillas
- 2 tablespoons olive oil, or as needed
- Wooden skewers, for assembling
For the Yogurt Sauce
- 1 cup full-fat Greek yogurt
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 garlic cloves, grated
- 1 tablespoon finely chopped fresh dill
- 1 tablespoon finely chopped fresh mint
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon freshly cracked black pepper
Preheat the oven to 400 F. Soak wooden skewers in water for at least 20–30 minutes to help prevent them from burning. Line a baking sheet with parchment paper or lightly coat it with cooking spray.
In a large bowl, combine the beef, onion, garlic, parsley, cilantro, paprika, salt, and black pepper. Mix until well combined.
Divide the beef mixture evenly among the tortillas. Spread a thin, even layer of beef over each tortilla.
Roll each tortilla tightly into a log. Slice each log into approximately 1-inch-thick pinwheels.
Thread the pinwheels onto the soaked skewers, arranging them with the cut sides facing outward. Place the skewers on the prepared baking sheet, cut side down. Drizzle a little olive oil over the top.
Bake for 15–20 minutes, until the beef is browned and reaches an internal temperature of 160 F. For extra browning, broil for 1–2 minutes at the end, watching closely to prevent burning. Remove from oven and let rest.
In a medium bowl, whisk together the yogurt sauce ingredients. Spread the yogurt sauce onto a serving plate into one layer. Serve the kebab roll-ups over the yogurt sauce, garnished with additional parsely.
