Why These Kebab Roll Ups Went Viral

These Viral Tortilla Beef Kebab Roll-Ups took off for a reason! They combine everything that we love about juicy, flavorful beef kebabs with the convenience of flour tortillas and a fun pinwheel shape. The technique is simple and the ingredients are easy to find. You get perfectly seasoned beef, golden tortilla edges, and a creamy garlic herb yogurt sauce that brings everything together.

Why You Will Love These Kebab Roll Ups

  • Easy to make: These kebab roll-ups come together with simple ingredients and minimal prep. No need to shape individual meatballs or kebabs.
  • Packed with flavor: Ground beef is seasoned with garlic, paprika, parsley, cilantro, and onion for a savory, herby flavor that Mediterranean/Middle Eastern food is known for.
  • A delicious yogurt sauce: The creamy garlic herb yogurt sauce adds a refreshing contrast to the warm, seasoned beef.

Ingredient Notes

  • Ground beef: I recommend using 85/15 ground beef for these kebab roll-ups. The fat adds flavor and keeps the beef juicy while baking.
  • Flour tortillas: Large flour tortillas work best because they’re easy to spread with the beef mixture and roll tightly. Use fresh, pliable tortillas to prevent cracking.
  • Grated onion: Grating the onion helps it blend seamlessly into the beef mixture.
  • Fresh herbs: Parsley and cilantro bring freshness to the beef and complement the spices.
  • Paprika: Adds a warm, smoky flavor and gives the beef its beautiful rich color.
  • Greek yogurt: Full-fat Greek yogurt creates a thick, creamy base for the sauce. It balances the savory beef with a little tanginess.
  • Fresh lemon: Lemon juice and zest brighten the yogurt sauce and keep it from tasting too heavy.
  • Fresh dill and mint: These herbs give the yogurt sauce a refreshing, Mediterranean-inspired flavor.
  • Garlic: Fresh garlic adds depth to both the beef and yogurt sauce. Grating the garlic into the sauce helps distribute the flavor evenly.

Tips for the best Kebabs

  • Soak the wooden skewers. Soak them in water for at least 20–30 minutes before assembling to help prevent them from burning in the oven.
  • Spread the beef evenly. Use a thin, even layer of beef over each tortilla. This helps the roll-ups cook evenly and makes them easier to slice.
  • Roll tightly. Rolling the tortillas snugly helps the pinwheels hold their shape when sliced and threaded onto the skewers.
  • Arrange the pinwheels carefully. Thread them onto the skewers with the cut sides facing outward so the beef cooks evenly and gets nicely browned.
  • Don’t skip the broiler. If you want extra color and crispy edges, broil the kebab roll-ups for 1–2 minutes at the end. Keep a close eye on them to prevent burning. This is a non-negotiable for me.
  • Check the internal temperature. Ground beef should reach 160 F before serving. If you’re unsure if they are fully cooked through, I recommend using an internal temperature to check.

What to Pair With Viral Tortilla Beef Kebab Roll-Ups

These beef kebab roll-ups are delicious served over the garlic herb yogurt sauce, but there are plenty of ways to turn them into a complete meal.

Serve them alongside a simple Mediterranean cucumber and tomato salad, roasted vegetables, or crispy oven-baked Greek potatoes. Warm pita bread, hummus, rice pilaf, or a fresh tabbouleh salad would also make great additions.

How to Store Properly

Refrigerator: Store leftover kebab roll-ups in an airtight container in the refrigerator for up to 3–4 days. Store the yogurt sauce separately to keep it fresh.

Reheating: Reheat the roll-ups in a 350 F oven or air fryer until warmed through. The air fryer is especially great for bringing back some of the crispy edges. You can also microwave them, although the tortillas will be softer.

Yogurt sauce: Store the garlic herb yogurt sauce in a separate airtight container in the refrigerator for up to 3 days. Stir before serving.

Freezing: The cooked beef kebab roll-ups can be frozen in an airtight container for up to 2 months. Thaw overnight in the refrigerator before reheating. I recommend making the yogurt sauce fresh rather than freezing it.

Ingredients

For the Kebab Roll-Ups

  • 1 pound ground beef (85/15)
  • ½ medium onion, grated
  • 3 garlic cloves, minced
  • 2 tablespoons chopped fresh parsley, plus more for garnish
  • 2 tablespoons chopped fresh cilantro
  • 2 teaspoons paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 4 large flour tortillas
  • 2 tablespoons olive oil, or as needed
  • Wooden skewers, for assembling

For the Yogurt Sauce

  • 1 cup full-fat Greek yogurt
  • 1 tablespoon extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 garlic cloves, grated
  • 1 tablespoon finely chopped fresh dill
  • 1 tablespoon finely chopped fresh mint
  • ½ teaspoon kosher salt, plus more to taste
  • ¼ teaspoon freshly cracked black pepper

Instructions

  • Preheat the oven to 400 F. Soak wooden skewers in water for at least 20–30 minutes to help prevent them from burning. Line a baking sheet with parchment paper or lightly coat it with cooking spray.
  • In a large bowl, combine the beef, onion, garlic, parsley, cilantro, paprika, salt, and black pepper. Mix until well combined.
  • Divide the beef mixture evenly among the tortillas. Spread a thin, even layer of beef over each tortilla.
  • Roll each tortilla tightly into a log. Slice each log into approximately 1-inch-thick pinwheels.
  • Thread the pinwheels onto the soaked skewers, arranging them with the cut sides facing outward. Place the skewers on the prepared baking sheet, cut side down. Drizzle a little olive oil over the top.
  • Bake for 15–20 minutes, until the beef is browned and reaches an internal temperature of 160 F. For extra browning, broil for 1–2 minutes at the end, watching closely to prevent burning. Remove from oven and let rest.
  • In a medium bowl, whisk together the yogurt sauce ingredients. Spread the yogurt sauce onto a serving plate into one layer. Serve the kebab roll-ups over the yogurt sauce, garnished with additional parsely.
