Watermelon, Cucumber, And Feta Checkerboard Salad

This refreshing checkerboard salad is the taste of summer! Refreshing, crispy, salty, sweet, cool and completely effortless to arrange.

- ¼ seedless watermelon, cut into 1-inch cubes
- 4 mini cucumbers, cut into 1-inch pieces
- 8 ounces feta cheese, cut into 1-inch cubes
- 1 tablespoon honey
- 1½ tablespoons balsamic pearls (or balsamic glaze)
- 1 tablespoon sliced fresh mint
- Salt and pepper, to taste
On a large plate or platter, arrange the watermelon, cucumber, and feta by alternating between them until the platter is covered.
Drizzle with honey. Spoon the balsamic pearls over the feta cubes, I like to keep it on the feta for a pop of color/contrast. Garnish with fresh mint. Season with salt and pepper, to taste, keep in mind, the feta is salty to start with. Enjoy!
