Chai Spiced Apple Galette With Caramel Sauce

To keep this galette organic, this caramel sauce if made with coconut cream and date syrup. It’s refined sugar-free, dairy-free, and guilt-free! You may want to double this batch to keep around for ice cream, brownies, specialty holiday coffee drinks, or any other dessert for that matter.

Ingredients To Make This Chai Spiced Apple Galette

Caramel Sauce:

1/2 cup coconut cream

1/2 cup date syrup

1/2 teaspoon sea salt

Apple Galette:

3 honey crisp apples, halved, cored, and thinly sliced

2 teaspoons lemon juice

2 tablespoons coconut sugar

1 1/2 teaspoons cinnamon, ground

1/2 teaspoon cardamom, ground

1/2 teaspoon all spice, ground

1/2 teaspoon ginger, ground

1/4 teaspoon nutmeg, ground

1/4 teaspoon cloves, ground

1 teaspoon vanilla extract

1 tablespoon cornstarch

2-4 tablespoons all purpose flour, for rolling dough

2 (9 oz) Wholly Wholesome NEW Organic Pie and Pastry Dough, thawed

1 egg, for egg wash

2 tablespoons raw sugar

Chai Spiced Apple Galette With Caramel Sauce

To Make This Galette

First, make the caramel sauce.

Heat the date syrup and coconut cream on medium heat until it’s bubbly. Reduce the heat to medium/low and whisk the sauce for 7-10 minutes until it reaches a fairly thick consistency. Remove the saucepan from the heat source. Stir in the sea salt and set it aside to cool.

Next, make the apple filling.

In a large bowl, toss the sliced apples with lemon juice. Add the coconut sugar, cinnamon, cardamom, all spice, ginger, nutmeg, cloves, vanilla and cornstarch. Toss it all together until the apples are well coated.

Next, get the pie crust ready.

Preheat the oven to 375 degrees F. Line a large baking sheet with parchment paper.

Lightly flour your clean work surface. Combine the two dough balls into one large one. Sprinkle the ball of dough with flour. Roll the dough into a 12-inch circle (it doesn’t have to be perfectly round). Sprinkle it with more flour as needed while rolling. 

Carefully roll up the dough onto the rolling pin and transfer to baking sheet.

Evenly spread the apple filling onto the dough, leaving a 2-inch border around the edges. Discard the juices. You can pile them into a circle or stack a few slices together and fan them out to make a design.

Fold the edges of the dough over the apples, working in 2-3 inch sections. Gently press to seal the edges.

Beat together the egg and 1 tbsp water. Brush the egg wash over the edges of the galette. Sprinkle the edges with raw sugar.

Bake for 35-45 minutes until the crust is golden. Drizzle with the caramel sauce. Slice and serve.
