Chorizo and Hash Brown Breakfast Sliders
These breakfast sliders are baked on Hawaiian rolls and layered with chorizo, hash brown, scrambled eggs, and extra cheese.
The combination with breakfast sliders are endless! I’m determined to try all different kinds of fillings for these. In the meantime, chorizo and hash browns it is. Chorizo is a popular pork sausage that originated from Mexico. It tends to be red in color from the dried red chili peppers it is made with. If you’ve never cooked with chorizo here is your opportunity!
These work well with feeding a crowd. Kids love ’em because they can grab them on-the-go. They can be assembled quickly which is a huge plus in the morning when everyone is up and hungry.
CHORIZO AND HASH BROWN BREAKFAST SLIDERS
Ingredients
- 1 12 count package Hawaiian rolls
- 1 pound chorizo
- 1 onion diced
- 2 cups hash browns frozen
- 5 eggs
- 2 cups mild cheddar cheese shredded
- 1 tbsp butter melted
Instructions
- Preheat oven to 375 degrees. Slice through the Hawaiian rolls horizontally and place the bottom of the rolls in a 13×9 baking dish.
- In a medium pan, cook chorizo over medium heat for about 8-9 minutes. Remove from the pan and drain off excess oil.
- In the same pan, cook the onion until translucent, about 3 minutes. Then cook the hash browns until golden, about 3 minutes on each side. Remove from pan.
- Scramble eggs in the same pan until done, about 3 minutes.
- Assemble all ingredients as listed. Place the top of the rolls on top and brush them with melted butter.
- Bake in the oven for 15 minutes. Let cool for 5 minutes before serving.
