These Beef Broth Bowls have so much flavor and a nice kick too! The beef gets cooked until crispy and caramelized in a sweet, tangy soy sauce mixture, while the coconut curry broth comes together in just a few minutes. Everything gets layered into a bowl so you get a little bit of everything in every bite.

Why You’ll Love This Beef Broth Bowl

There is a lot to love about these bowls, but the crispy beef is definitely my favorite part. Letting the ground beef sit undisturbed in the skillet gives it those browned, crispy edges.

The broth is just as easy. Red curry paste, coconut milk, broth, soy sauce, lime, and a little fish sauce create a creamy, flavorful broth that comes together in one pan/pot. You only need to let it simmer for a few minutes to bring everything together.

And then there are the toppings. Fresh cucumber and green onions add crunch, lime adds a little acidity, and chili crunch brings the heat. It all balances out the richness of the coconut broth.

Ingredient Notes

  • Ground beef: I’m using 93/7 ground beef here. It has enough fat to get those crispy edges without leaving the beef overly greasy. If you’re using any other type of more fattier beef then this, your bowl is going to be filled with grease if you do not strain it after cooking.
  • Soy sauce: This seasons both the beef and the broth, so it really brings the savory flavor throughout the whole bowl.
  • Hoisin sauce + brown sugar: These give the beef a little sweetness and help create that sticky, caramelized coating as the sauce cooks down.
  • Rice vinegar: A little acidity keeps the beef from tasting too heavy and balances out the sweetness.
  • Fresh ginger and garlic: Fresh is definitely the way to go here. They add so much flavor to both the beef and the broth.
  • Red curry paste: This is where all that Thai-inspired flavor comes from. You can adjust the amount depending on how spicy you like your curry.
  • Coconut milk: Use full-fat coconut milk for the creamiest broth. It gives the broth that rich, silky texture. For a creamier texture, use coconut cream.
  • Fish sauce: Don’t skip this! You only need a teaspoon, but it adds a deep savory flavor that makes the broth taste much more developed.
  • Jasmine rice: The fluffy rice soaks up some of that coconut curry broth and makes the bowls extra satisfying.
  • Cucumber, lime, and green onions: These fresh toppings are important because they balance all of the rich flavors in the bowl.
  • Chili crunch: Finish with as much or as little as you like. The crunchy texture and little hit of heat are so good with the creamy coconut broth.

Tips For Making The Best Broth Bowls

Let the beef get crispy. Once you add the ground beef to the hot skillet, spread it into an even layer and leave it alone for a few minutes. Resist the urge to immediately break it apart. This is how you get those crispy browned edges.

Cook the sauce all the way down. After adding the soy sauce mixture, keep cooking until most of the liquid has reduced and starts caramelizing onto the beef. That’s where a lot of the flavor comes from.

Cook the curry paste before adding the liquids. Give the red curry paste a minute in the skillet with the garlic and ginger. It helps bring out its flavor and makes the broth taste much more flavorful.

Don’t boil the coconut broth. You just want a gentle simmer. Once everything is hot and combined, it’s ready to go.

Assemble right before serving. These bowls are best when the rice is warm, the broth is hot, and the beef is still crispy. Add the toppings right before serving and dig in.

Variations To Play With

  • Use ground chicken: Ground chicken works really well in place of the beef if you want something a little lighter.
  • Add vegetables: Baby spinach, shredded carrots, bell peppers, or snap peas would all be great additions.
  • Try noodles: Swap the jasmine rice for rice noodles and turn this into more of a noodle bowl.
  • Add herbs: Fresh cilantro or Thai basil would be delicious with the coconut curry broth.
  • Make it extra crunchy: Add chopped peanuts or crispy fried onions or shallots right before serving.

Ingredients
  

Crispy Beef

  • 2 pounds ground beef (93/7)
  • cup soy sauce
  • 2 tablespoons hoisin sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 4 cloves garlic, minced
  • 1 teaspoon freshly grated ginger

Coconut Curry Broth

  • 1 tablespoon avocado oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons red curry paste
  • 3 cups beef (or chicken) broth
  • 1 (15 oz) can coconut milk
  • 3 tablespoons soy sauce
  • 1 tablespoons fresh lime juice
  • 1 teaspoon fish sauce
  • 1 tablespoon sesame oil

For the Bowls

  • Cooked jasmine rice
  • Persian cucumber, thinly sliced or cut into half-moons
  • Green onions, thinly sliced
  • Lime wedges
  • Chili crunch

Instructions
 

For the Crispy Beef

  • Heat a large skillet over medium/high heat. Once hot, add the ground beef. Spread it over the skillet in an even layer. Leave it undisturbed to let cook and create some crispy edges. Let it cook for 3-5 minutes. Break up the beef into smaller pieces and continue cooking until beef is almost all the way cooked through.
  • While beef is cooking, whisk together the soy sauce, hoisin sauce, rice vinegar, and sugar and set aside.
  • Reduce heat to medium. Add garlic and ginger and cook for another minute. Add the soy sauce mixture. Stir until beef is completely coated. Leave the beef undisturbed once more until liquid fully reduces and starts to caramelize on the bottom, about 2-4 minutes. Remove from heat.

For the Broth

  • Heat oil in another skillet or sauce pan over medium heat. Add garlic and ginger, cook for 30 seconds. Stir in red curry paste, cook for an additional minute. This will help bring out the flavor. Whisk in beef broth, coconut milk, soy sauce, lime juice, fish sauce, and sesame oil. Bring to a gentle simmer and remove from heat.

Assemble the Bowls

  • For each bowl: Add a generous scoop of warm jasmine rice. Ladle the hot coconut broth into the bowl. Pile the crispy beef next to the rice. Add fresh cucumber alongside the beef.
  • Finish each bowl with sliced green onions, lime wedges, and a spoonful of chili crunch. Serve immediately.

Notes

Rice Tip: If you’d like to have your rice mounted like in the photos, lightly oil the inside of a small bowl, then pack it with rice. Wet your finger with water and press the rice down into the bowl gently. Invert into the serving plate and voila!
