Garlicky Kickin’ Blender Salsa

After working for a boss who eats and breathes salsa, I’ve been on a mission to put together the perfect salsa recipe. After trying so many recipes, I’ve finally hit a home run. Here is what I came up with that seems to please everyone in the office, including the hubby. So now, when I make this salsa recipe for our taco Tuesday nights with the family, I bring in a bowl the next day and it’s gone within minutes!

GARLICKY KICKIN’ BLENDER SALSA

Ingredients

  • 2 (15oz) cans fire-roasted tomatoes with green chiles
  • 1 cup frozen or canned corn
  • 1 jalapeño, seeded (add less if you don’t like the heat)
  • 1 small onion
  • 3 garlic cloves
  • 1 lime, juiced
  • handful cilantro, rinsed
  • 1/2 tsp of salt, ground black pepper, cumin, and chili powder

Instructions

  1. Put all ingredients in a blender or food processor.
  2. Blend/process until all ingredients are well combined.
  3. Serve with tortilla chips.
